Salmon Wellington with well done salmon

I am making salmon wellington. I look my salmon very well done. Can I precook the salmon a little before I assemble the wellingtons? Thanks for your help!

I love my instant read thermometer! It would be very helpful to make sure the salmon is done to you taste. Remember that anything cooked en mass, like this salmon wellington, will also continue cooking for a bit after you take out of the oven to let the juices redistribute within the meat.

You could but this might really dry the salmon out. I would suggest instead considering cooking in the pastry for a few extra minutes while keeping an eye on the pastry to make sure it's not browning too much
