Is there a way to tackle Sheet Pan Roasted Salmon with Tomatoes and Fennel using the slow roasting method?

Wondering if slow-roasting would end up turning the cherry tomatoes into dried tomatoes or leave them raw.

It will not dry them out. Slow roasting sort of wilts them, ie. the skin gets wrinkly while the flesh remains juicy. Nigella Lawson called them "moonblush tomatoes".
