That seems like far too much thyme to me, too. I checked a number of other sources, including the cookbook from which this Ottolenghi recipe came from, "Simple," which does indeed say to use 1/2 cup. A few other places where the recipe was published say to use 1/4 cup, which seems like the better amount. I would make it with 1/4 cup.
I realize that the beet, caraway and goat cheese are all fairly bold flavors, which may balance the thyme, but I would be concerned that if there were too much thyme in the bread, it would overwhelm it, making it unpalatable. ;o)
