Vegetarian - cashew cheese, curry sauce with dal, salsa, tahini pistachio and pomegranate mix, classic 3-bean salad (either cold or warmed up).
Meat or fish, no dairy - chili, shredded brisket, pulled pork, smoked fish (fillets or chopped up)

For SURE! the author explains it as an 'anything' goes kind of recipe. So use whatever you want but creamy [the texture , not 'cream'] is nice. how 'bout mashed avocado, or minced sauteed mushrooms, or mashed cooked eggplant w/ chopped tomatoes, or cooked bulghur mixed with minced cooek mushrooms, or Moroccan taratour sauce made with stock soaked bread ,finely ground toasted almonds, extra virgin olive oil, lemon juice, vinegar.... ?
