Double 00 flour question. Does it have a shelf life? What is bad flour?

I bought a huge bag of Caputo double 00 flour a few years ago. I read that it goes bad after awhile. If so does anyone know what the shelf life is? More importantly what happens if it is old. What will change in the texture and taste if I’m wanting to make pasta with it? Thanks in advance.

Hi Tasha! Yes, flour does have a shelf life—it's usually around half a year (you can keep pantry items, like flours, nuts, seeds, etc. in the freezer for a longer shelf-life). Flour goes "bad" by turning rancid—try (carefully!) smelling the flour. Does it smell off? Fresh flour will not have a strong scent, if any at all.
