Milk as substitute for heavy cream?

Could I substitute whole milk for heavy cream?

Hi Joanna! You sure can, though the sauce will be thinner. Not a huge deal, but if you'd like it to be thicker, you could add a bit of extra butter to the roux, and add a little less milk (~1 cup). The sauce will be more roux-based, than cream-based, but will give you that missing heft!
