Having Difficulty Simmering Beans in a pot

Always have difficulty cooking beans When it needs to simmer. After a while, the water always starts to boil and when I lower the flame it doesn’t go back to a even
simmer for a long time. Have tried two different flame tamers and it doesn’t help. I have a gas cooktop. Any suggestions?

I second Nancy's advice for the oven method. I have a gas stove but still have the same problem you experience. The oven method works really well.

I can't give much advice on your gas cooktop, but I do have ideas for cooking beans.
If you have a slow cooker, instant pot or rice cooker, cook them in there.
Foolproof and no watching.
Or, in a standard oven.
