Does the Lindsay Maitland Hunt roasting method work for a larger bird like a capon?

I expect the cooking time to be a lot longer, but would that be the only issue?

Well it turns out it works - and I didn't even need to crisp up the skin at the end. 8 lb. bird - 300F for about 3 hrs. Awesome, tasty and easier than doing two fussy chickens.
