I transplanted rhubarb and it wilted - can it be saved?

It should bounce back. Make sure to keep it watered--and you can even put up a shade if you are getting hot sunny weather for several days. You might hold off on harvesting this season.
I always try to check the forecast and transplant things just before a rainy cloudy spell, but I have definitely messed up (several times), and plants usually recover.
