Keysamie - If I understand you correctly you want to take a frozen cheesecake (raw, vegan) from the freezer and set it out for hours at room temperature without melting. If so, I'm afraid there will be tears. Or maybe a melting, unsafe cake. For safety, a frozen or refrigerated cake may be held maximum 2 hours at room temp. For aesthetics and taste, a frozen cake will be at its best for only a few minutes. At various gatherings of my family and friends, when we have one of those, we serve it, give the big eaters an early chance at a second helping, then put it right back in the freezer. Rinse and repeat, as needed. If you need to serve a frozen cake at a buffet, maybe follow a similar procedure...have a few cakes (maybe smaller), take one out for a few minutes, rotate back. And/or serve on a bed of ice. And/or pick a baked (not frozen, not refrigerated) cake instead for this occasion.
