Could one prepare the dough, square it fold it, then wrap it in plastic wrap or place in a 2 gallon zipper bag and store in the fridge for a day or two ? Before baking the biscuits (after their stay in the fridge ) cut them out and bake them per the recipes instructions ?

Yes, you can do that or you can freeze them also.   You can cook them directly from the freezer for a little longer.  I usually always refrigerate my biscuits for an hour before baking.
