What could I use instead of the maple syrup, that still tastes good?

Any berry syrup would taste great, too.

Another tree syrup (like pine), fruit or plant syrup (date, pomegranate, agave), sugar syrup (Golden Syrup, corn, molasses, etc).
As this is a baked custardy dish, even brown sugar or flavored white sugar.

Last idea - not exactly the same density, but yes liquid, sweet & good - some bourbon, rum or fruit-flavored liqueur. Will go nicely with the eggs and other flavors.
