What to use instead of Extract

Question

What could you use instead of lemon extract? I find using extracts other than vanilla sometimes taste fake.

I also vote for a liqueur, as the flavors there are usually rich and true.And if you don't have lemon-flavored, an orange or herbal liqueur would do nicely.

I agree 100%. Here are a couple of suggestions: use about 1/4 teaspoon  of lemon oil such as Boyajin.  This is strong, so you  less. You can use real lemon juice reduced down to syrupy consistency, then use 1 teaspoon  of the syrup. Or add 1- 1 1/4 teaspoons of finely grated lemon zest. (any more than that causes grittiness) or a lemon liquor such as Limoncello. I hope this helps.  Happy vaking!

You can use lemon essential oil (food-grade).  You will probably only need a couple of drops since the oil is concentrated.
