sodium citrate - royal icing? less sweet sugar cookies?

hi everyone! i'm making sugar cookies from scratch for the first time since i was a kid. i know this is a fairly easy cookie to make but from my memory they're always too sweet. wondering by how much i can reduce sugar to maintain texture? or if anyone has a fave recipe they can recommend?

also, i have sodium citrate that i purchased to make nacho cheese lol. was thinking maybe i could use this in royal icing to cut the sweetness in place of lemon/salt. thoughts?
