Yes, you certainly can substitute all purpose gluten free flour for the wheat flour in this recipe. This is precisely the type of recipe that such gluten free blends were designed for.

We have a close family friend who cannot tolerate gluten, for whom I've made pancakes and waffles numerous times over the past few years. I always substitute a GF option, one-for-one, and it works great! ;o)
