I bake for restaurants, I add 1/2 cup to 1 cup of mayonnaise to cake batter for a more moist cake. I also use a simple syrup.

Hi! Thank you for your reply, I brushed with simple syrup but it didn’t seem to help I will have to try the coffee flavored but may be the same effect..

Other than using another recipe for the cake, I would brush and moisten the cake with a simple syrup or maybe a coffee-flavored syrup.
