Turkey thighs instead of chicken?

Could you sub turkey thigh for the chicken? Seems like it would work if you could cut it up smaller.

Can you us chicken breasts instead of the thigh?

Donna, the problem with using the breast in a stew is that the meat is so lean, it’s easy to over-cook and then can turn tough. Breasts do better cooked relatively quicker and at a higher temperature.

It’s so hard to over-cook thighs, they’re a much better bet in anything stewed.

I don't see any reason why you couldn't use turkey thighs, either. There would be a slight difference in taste, but that's not a bad thing. The size of some of the chicken thighs in my local stores has often made me wonder if there weren't already turkey in the lineage anyway.

Having braised turkey thighs quite often (LOVE them braised...and they practically give them away at the store) I might sear the whole thigh with the skin on. When it’s cool enough, remove the skin and then proceed with the stew with the thigh left whole.

At the end, I’d remove it and shred it or cut it into chunks, and add it back into the stew.

Should work fine, if a little more labor intensive.
