Is it possible to use a sugar substitute for us diabetics ?

Should be ok to use a sugar substitute. Might not be a 1:1 swap. Non-sugar sweeteners tend to be sweeter than sugar, so you might need less.

Also, since this is a frozen product, you'll want to make it a little sweeter than what you prefer. Cold temperatures can mute flavors somewhat.
