Mushroom would be a great addition

If adding mushrooms - Would you sauté them along with the garlic and shallots. Would that require more oil or butter?

Mushrooms and shallots sound great. I would probably cook the mushrooms separately (they give off a lot of liquid) and then add the sautéed mushrooms to the garlic and shallots in step 2. You shouldn’t need more oil beyond what you need to brown the mushrooms.
