How much flour in the conch chowder please?

Hi! Currently in the TCI and making this with fresh conch. Recipe calls for a roux, mentions flours, but it s not listed in the ingredients list. How much should I use? (And yes, I do have Turks Head here, but i prefer the amber! ;-)

Rule of thumb for a roux is equal parts butter and flour. So same volume as the butter.
Jealous of your location - enjoy the sunshine, and presumably drinks with umbrella hats :)
