Eggplant slices - your best methods? tips?

I'm planning to make eggplant slices, half for sandwiches, half for pizza topping. Haven't cooked this vegetable in a while.
All I know lately is we don't need to salt them before cooking.
One recipe I saw recommended breading the slices in gram (chickpea flour) but I couldn't find them in this week's shopping. OK to use all purpose? or just fry them plain?
Other ideas or methods?

Slice and bake at 400, with or without breading, drizzled with oil for about 10 min.or till browned on bottom. Turn and cooked till browned, about 5-10 min. moref

For the two specific usage cases mentioned here my personal preference would be to grill the eggplant slices.

Hi Nancy,
For what you’re doing I wouldn’t bread or fry … I’d slice them sort of thinly and roast them with olive oil, balsamic, salt and pepper at 400 until tender and a little golden. Alternatively you could grill and marinate:

Oh and I leave the skins on because I like them but that’s a matter of taste!
