Sandwiches with fried eggs in them?
I'm looking for new dishes or existing sandwiches/dishes that incorporate sunny side eggs or the egg yolk?
I'm aware of the obvious tartares, burgers, croque monsieur, chivito, but suggestions or info on any other sandwiches that focus on having a loose yolk would be great! Thanks!

cheddar grits with capers topped with a sunny side up egg and a dash of hot sauce. its pretty amazing.

My grandmother used to make the most wonderful Salmon Croquets that we always ate as a sandwich with a sunny egg dripping over and a nice bit of horseradish if you like.
1 C. cooked salmon
2 Tbs. mayonaise
2 Tbs. minced onion
1 Tbs. minced celery
1 Tbs. minced fresh dill
2 slices of bread ripped to shreds.
touch of milk to moisten.
(capers) gramma never added these.
salt and pepper to taste.
mix the ingridients together to form a burger texture, patty into rounds and sear in a skillet with some butter.

I have had in Thailand these wonderful egg/omelet meals that could be a sandwich. Germans will have wiener schnitzel with an egg on top, so it could go in a sandwich. I can see a bit of bacon slab, braised in a mango, sultanas, cider vinegar and onions . . . take the bacon out after cooking and make a chutney from the cooking liquor to use in a sandwich with an egg.
