I say resoundingly no! When canning with a hot water bath you want each jar to stand alone, not touching other jars or the side of the pan. The ensures both even heating and sterilization as well as a secure seal. If you run out of room in your pot, can in two batches.
(But now I am going to see if there’s a double rack available that will allow safe double stacking)
Just FYI - I also thought “no” at first, from common knowledge. Then read the article, endorsed by some county extension bureaus, and now wonder if it might be possible.
