What are the Weights of the Cheeses?
This recipe kindly provides weights in grams for the bread, but not for the cheeses. It sure would be helpful! Assuming that the mozzarella is shredded, it'd be completely unclear how densely it should be packed for measuring.

Others gave them - so use one of those or their ratios: 1 lb cheese (4 oz each Monterey Jack and mozzarella, 8 oz feta) to dough recipe made from 2 1/4 cups flour.
