From making similar recipes, I would prepare and store separated the three elements (cooked eggplant, cucumber yogurt and optional kale chips). Store kale chips air-tight at room temp, the others refrigerated. Best max 1 or 2 days in advance. Just before serving, heat eggplant (optional). Combine it with cold cucumber sauce, and optional chips.
