I'm wondering if this could be made in a large Pullman loaf pan?

Probably yes. Keep in mind a couple things
* capacity comparisons: if original spring form pan was 10" diameter it holds about 12cups, large Pullman loaf pan if 13 x 4 x 4" holds about 14 cups
* pastry : if you bake this pie with the Pullman loaf cover ON, the top pastry will not crisp up. If you bake in the pullman loaf cover OFF, the top pastry will crisp up.

Thanks. I wouldn't plan on using the cover. But now I'm thinking of scaling down the recipe and using my smaller Pullman - there's only two of us, and seeing the 10 c capacity made me ponder.

When I'm faced with a dish like this for only one or two, I sometimes make the whole recipe, and freeze half.
In this case, the filling and pastry both freeze well (separated).
So I take advantage of the work one time, and all I have to do for the 2nd batch is roll out pastry, fill the pan and bake.
