Is a stand mixer essential here? Would it be terrible to mix by hand?
Whenever I crave cookies, it's usually later after dinner, after I've already cleaned the kitchen. I surely don't want to lug out the stand mixer and get it dirty and have to clean it up. I'm just wondering if the recipe could be as good with just a spatula and bowl? I'm not a baker, so I don't know the 'best practices' here.
