Haven’t done it for this recipe, but yes heard of using celeriac instead of celery (they’re closely related botanically and have similar but not identical taste notes). Have yes done similar substitution last in recipes using the brassica family, usually with fine results. I would do it, maybe a half batch the first time - in case I didn’t love it. And then make again if I like the results.
