Yes to your ideas. Also: * quinoa - which is a seed * buckwheat (aka kasha) - which is a grass. Both would need to be cooked before using in this recipe.
RP - glad to help :) Had a couple more ideas overnight, if you have these on hand and can eat them - Rye flakes Oat flakes. (Use raw for more crunch, or cooked first for a softer texture.
