I don't eat grain. What can I substitute for the bread crumbs? Ground almonds? Ground flax seed?

Great question! I love your almond suggestion; some sliced roasted almonds would be great for added crunch, and crushed cornflakes could work as well. Happy cooking!

Yes to your ideas.
Also:
* quinoa - which is a seed
* buckwheat (aka kasha) - which is a grass.
Both would need to be cooked before using in this recipe.

Had a couple more ideas overnight, if you have these on hand and can eat them -
Rye flakes
Oat flakes.
(Use raw for more crunch, or cooked first for a softer texture.
