Should you be inclined to press on, you might start with 1 3/4 cups of flour, observe the batter texture, then make the call whether or not to add more flour.
Or try another recipe from a more reputable source with an established track record of testing diligence and editorial soundness.

I HAVE been able to find other vegan recipes for banana chocolate chip muffins, and all or almost all have much less than 2 3/4 cup flour for a batch of 12.
Have a look at this search result in case one of these appeals to you and is similar enough to the food52 one that caught your eye.
Many are from bloggers and a handful are from sources like BBC GoodFood and various magazines (Chatelaine, several Australian) who definitely have test kitchens.
I was looking for a Psyllium Husk muffin recipe and did end up making this one. It’s not bad but pretty tight. Will try adjusting flour quantities! Thanks again.
