how long to oatmeal cookies stay fresh?

my son asked me to make cookies for his wedding favors. The week of the wedding I am busy every day and don't know when I can have the time. If I make today and freeze will they taste fresh or be soggy ect. If I leave it in the fridge for 7 days will they be fresh? Thanks
