The last step for Baked Alaska

For New Year’s Eve, I’ve prepped a Baked Alaska to bring for dinner. To reduce stress, can I make the Swiss? Meringue this morning and place in airtight (refrigeratored) container, then after dinner add merangue to assembled dessert the torch?? Or use marshmallows fluff???

Haven't done this in a while, so checked several sources online

Some say it's ok to put Swiss Meringue in the fridge, but more warn that it could collapse and is not a good idea. So, on balance, iffy. Your choice, but I'd go with the marshmallow fluff if I were pressed for time. Good luck with this festive dessert for your NYE meal!

One example of Baked Alaska using marshmallow fluff (this recipe uses home-made, but you can use store-bought).
