Sour cream topping on cheesecake
Does anyone have any hints for getting the sour cream topping to actually sit on top of the cheesecake? My method is to stir it very well, have it sit out until it's fully room temperature, dollop it on gently in small spoonfuls, and then smooth it out with an offset spatula. It always winds up looking like a Jackson Pollack painting. Any tips I haven't thought of would be appreciated!
