Frozen or canned Sour Cherries?
Which would work better in the "New York Cheesecake with Sour Cherry Topping"--assuming that one of them will work. Thank you.

Either would work if you can't get fresh sour cherries.
The frozen ones will be tarter and firmer, the canned ones sweeter and softer after being cooked in the can.
If it's not cherry season near you, maybe revert to original model and use strawberries?
Or another sweet-tart fruit now in season?
