Vegan Banana Cake - and gluten free
"I have an allergy to gluten and eggs, and I happen to have a ripe banana in my fridge. I absolutely adore banana bread and would love to make it, but I need a recipe that suits my dietary restrictions. I have tried making it before, but unfortunately, it did not bake properly. Does anyone know of a good recipe that I could follow?"

It works to make a banana loaf cake that is both vegan and GF.
As per the head note, use soft tofu instead of eggs, certified vegan sugar instead of regular and GF flour.
