What do I do with leftover super moist vegan date bread

I have a lot of vegan date bread leftover and it’s super tasty, but I’m tired of eating it 😅 Could I make something like cookies with them? Thank you!

Freeze for future use (when you’re no longer tired of it).
Make bread pudding.
Dry out and cut in small cubes to make sweet croutons for salad or soup.
