What to do with two pounds of tasteless trout?

I gently oven-poached a large trout, after it was salt brined and properly seasoned and citrussed. The result: tender, moist fish without any flavor. Any leftover thoughts that won’t lead to “well-cooked; still tasteless” comments?

Turn it into fish cakes. Use a good crab cake recipe, but substitute trout.
My son says to turn it into a soup.😉
**We did just return from a vacation to Norway, where Fish Soup is EVERYWHERE.

Although it’s not smoked, you could make something like a white fish salad or spread & go heavy on the horse radish.

First idea - make a fish pie (with peas and mashed potato), very good and borrows flavor from the sauce and veg.

Second idea - serve in sandwiches on multigrain bread with strong-flavored sauces and/or garnishes. Hot peppers, onion, ranch dressing, prepared horseradish - whatever pleases you and those you cook for. Again, borrow flavor from the other ingredients.

Fish pate, maybe? Mash with softened butter, lemon juice & zest, fresh thyme and/or cracked pink peppercorn
