Hi Lesa! One of my favorite things about this salad is the crispy potatoes, and unfortunately you lose that crispiness after a day or so. Happy cooking!

Shannon is right. Any dish that is refrigerated for a day or two is going to lose its crispiness regardless of whether it's this particular dish or pretty much anything else.
