Make this sourdough, not yeast.

I want to make this a sourdough recipe. How would I change out the yeast for sourdough and would anything in recipe ingredients need adjusted?

Not specific advice for the croissant donuts, but here's a good article about converting any yeast bread recipe to sourdough method.
