How can I save this Ice Cream?
I added 1/2 cup of Peach Brandy to a recipe calling for 1 and 1/2 cups of fruit puree. I only had 1 cup of puree. My ice cream won't freeze up. How can I save this creamy peachy, brandy concoction?

Get yourself some more peaches and make another half cup of puree. Personally, I would make at least another full cup to be sure your recipe will work the second time around.

Really? More fruit will allow this mixture to freeze? I’m pretty sure the brandy will not allow it to freeze. Am I wrong about that?

I was assuming that by adding the missing 1/2 cup of peach puree, you would return the recipe to its original ingredient list. Did you add the Peach Brandy as an EXTRA ingredient not in the original recipe? If so, then YES, the alcohol in the Brandy is what is keeping your ice cream from freezing.

This is a Martha Stewert Strawberry Ice Cream recipe. You macerate the fruit in vodka (supposedly you drain this out--but the fruit absorbs it) so when I was short 1/2 cup of fruit puree I figured 1/2 cup of Peach Brandy (which has been in the cupboard for years) would work (considering the vodka) but it was apparently too much.
I am going to use mascapone cheese and attempt an Icebox Cake (maybe Graham Crackers or the like) or Tiramisu.
It's a shame because it's just me and my better half for all this goodness. I'll have to surprise a neighbor!!
