This sounds like a delicious idea and is relatively common! I would use something dryer to counteract the natural sweetness of the lobster.

Yes, white wine is often added to soup (bisque) made with lobster broth. It adds an acidic fruity note to balance the richness of the seafood.
Or, also used often, you could add some brandy to the soup.
