Of all the things we'll miss when summer comes to a close, peaches take the cake (or tartlet or crumble). We're eating them in anything and everything. They've overtaken our countertops and fruit bowls and, you know what, we're just fine with it. We might even say: Everything's just peachy.

Persian chicken and peach stew: khoresh-e hulu! A favorite. And to use up riper peaches, I like to make them into a slapdash preserve and mix it in with some coarse mustard. Good for cheese or charcuterie plates.
