We're gazing down a stretch of days toward Memorial Day weekend, and we're itching to do nothing except lay in a hammock with a lemonade or a gin and tonic or both. (New Yorkers: Let's look past today's rain, shall we?)

My first thing is always a bunch of grilled seafood ... at least salmon, shrimp, scallops, squid, mussels (maybe lobster too) tossed on a tray of vermicelli and basil pesto ... My favorite dish in the world ...
