Every month we choose a Food52er to thank for his or her generous help and guidance on the Hotline, and we're excited to announce that June's Hotline MVP is ktr!
Ktr jumps in to assist with everything from ingredient substitutions to tweaks for tempering the taste of raw red onions. She also knows her homemade yogurt, explaining what to do with a temperamental yogurt starter and how to make sure the final product is creamy.
Our favorite response of hers this month though is her no-nonsense answer to seasoning cast-iron pans. She seasoned her first one following the standard method of rubbing it with oil and then baking it, but she hasn’t since, explaining:
I found that simply using the pan was the best way to season it. Don't be afraid to add butter, oil, lard, or grease to the pan when cooking—it will help it become more nonstick over time.
