All throughout June, our Cookbook Club is focusing on The Moosewood Restaurant Table by The Moosewood Collective. We were already wowed by the delicious summery dishes everyone's whipped up, but this week, Laura G. Myers really caught our attention when she posted her take on the Chilled Pineapple-Mango Soup.
Another great cold soup with coconut water and coconut milk with the essence of mint and basil. Creamy but refreshing. I had some extra Pineapple Mango Relish, I so garnished with that and wowza—summer in a glass.
That settles it. According to the calendar, it might still be spring, but we're ready to get summery cold soups in our meal rotation. She freezes soup in zip-top bags to take backpacking, and enjoys sipping a frosty treat after a long day of hiking (this works just as well for less-intense activities, too—like picnicking!).
