From fruit fillings made with blueberries, blackberries, strawberries, and raspberries (sensing a theme here?) to refreshing ice cream pies to beat the heat, these 4th of July pie recipes are the perfect summertime treats for America's birthday weekend.

The basic premise of a fruit pie stays the same: you toss berries, stone fruit, or apples with some sugar, cornstarch, and lemon juice, which help to release the fruit's juices and create a sweet-syrupy filling. Fill this in a pie shell, then top with an intricate design like a lattice pattern or a single layer of pie dough, along with a sprinkle of sanding sugar, and a dollop or two of whipped cream for good measure (after it bakes and cools, of course). The Fourth is a party, after all, and is worthy of a celebratory pie.

1. Fresh Blueberry Pie
