Video: How to Shape Tortellini

January 21, 2014

Inspired by conversations on the Food52 Hotline, we're sharing tips and tricks that make navigating all of our kitchens easier and more fun.

Today: How to shape iconic (and adorable) tortellini, from Mario Batali's How To Tuesdays series.

Shop the Story

If you're like us, tortellini holds a special place in your hearts. It's so chubby and inviting -- plus it looks like it's giving itself a hug. Served en brodo or simply with butter and a light grating of parmigiano-reggiano, tortellini is Italian comfort food at its most pure. While most of us have fond memories of frozen or dried tortellini, nothing can compare to homemade -- and now, thanks to the crew over at How to Tuesdays, it doesn't have to.

Watch as Chef Josh Laurano of Tarry Market shows us how to fill and shape these iconic pastas: it's a lot easier than you think. First, whip up your favorite filling (look here or here if you need inspiration). Next, make your own pasta dough and then roll it out. Finally, get on your apron and your game face -- we're shaping tortellini.
