Most advice about deep-frying is for the temp to be somewhere between 350-375F.

Yes, 375F measured by a candy thermometer is a very good benchmark for something like croquettas which should be fairly crisp after their dunk in screaming hot oil. Use an oil with a high smoke point, e.g. canola, grapeseed etc.
