Any idea how long this will keep? Should I leave out the eggs if I plan to store for any amount of time?

It will probably start to lose its brightness (color and flavor) after a few days -- but I've never tasted it past day 3 because we eat keep eating it all! I'm asking around for others who may have stored it longer.
