It will work, but you have to be diligent about checking for doneness because the suggested cooking time will not be accurate.

I have not made this cake, but I switch out pans all the time. Depending on your pan size, the timing will be different. Two 9" round cake pans will take more like 40 minutes. I would check at 35 minutes and watch it closely.
